The Straits Clan’s lobby is home to Kin, which is led by “Grandfather of Heritage Cuisine” – no other than Head Chef Damian D’Silva himself.

With heirloom recipes and local ingredients heightened by a sprinkle of nostalgia from Chef Damian’s stories, Kin, a fine dining restaurant, delivers Singapore’s multicultural melting pot to the forefront. It’s home cooking done to perfection, with new spins on classic dishes.

Chef Damian’s childhood was influenced by food, particularly Eurasian dishes prepared by his grandfather “Pop.” These influences are reflected in Kin’s cuisine and establishes the tone for a restaurant that celebrates Singaporean identity in its cuisine.

The local convivial dining mood is at its finest in the Pork Knuckle Debal (S$68), which is typically prepared from leftover meats from Christmas feasts. The inside is clean and modern. Modernized wood furniture, bright orange chairs, and soft pillows give an contemporary vibe.

Executive Chef Paul Hallett’s Menu – which includes a variety of modern, fusion dishes – is one of my favorites. It’s difficult to add a cultural spin to the food. On one hand, there are several grilled meats (beef) and on the other, starters with a hint of Japanese-ness.

Chef de cuisine Douglas Tay runs the Osia Restaurant at Resorts World Sentosa, which features a seasonal menu that follows local trends. Osia, a fine dining restaurant, uses local Australian ingredients and cutting-edge culinary techniques to create a cuisine that is ‘out-of-the-box’ thinking.

Osia’s dishes are full of different and complicated spices, so some of them might be too advanced for first-time users. The cuisine is excellent in terms of quality, but the a la carte menu is somewhat pricey.

Colony, a fine dining restaurant, like its namesake, maintains the traces of British occupation. The emblematic British travels during the 18th century for trade and commerce are adorned with the logo. The embellished old ink is written in cursives over the map and black-and-white photos of events are many of which may be observed hanging at Colony.

Colony’s menu includes a mix of international and traditional dishes from Western, Singapore, Chinese, Malaysian, and Indian cuisines. The Colony has an unusual conservatory kitchen where you can observe your meal in the making. The ice bar, barbecue grill and rotisserie, steam basket, wok, fruit stall, and patisserie are all included in the seven-conservatory kitchen.

To give you the greatest visit possible, the food served and the ingredients chosen are of exceptional quality. Their exotic handcrafted original cocktails and wines like Prosecco go wonderfully with the entire culinary journey. The Colony’s unique Sunday champagne brunch is a must-try experience.
